NUTR 30200 - Nutrition Education



Basic nutrition and its application to current trends and controversies. Emphases placed on teaching techniques and communicating sound nutritional concepts to the lay audience. For nonscience majors.

Student Learning Outcomes
1. Demonstrate knowledge of basic nutrition principles. 
2. Demonstrate an understanding of the relationship of nutrition to health. 
3. Identify and examine pertinent nutrient concerns of those from early childhood through adolescence. 
4. Identify how culture, ethnicity, gender, race, religion, socioeconomic status, geography, politics, education, and philosophy are related to food habits, and to promote understanding of this diversity. 
5. Identify positive aspects of, and potential nutrition related problems that occur among the diverse population groups in the United States. 
6. Identify and explore programs and services available to at-risk populations to facilitate optimal nutritional intake of individuals. 
7. Identify and describe causes of and methods of prevention of food borne illness. 
8. Summarize factors influencing body size and shape, and evaluate the importance of healthy attitudes and acceptance of diverse body sizes and shapes. 
9. Demonstrate and understanding of nutrition fads and misinformation, and the roles of various agencies and organizations in combating nutrition misinformation. 
10. Identify accurate sources of nutrition information. 
11. Identify nutrition education materials that respect and promote diversity. 
12. Prepare and conduct nutrition education lessons which provide accurate nutrition information, and also respect and promote diversity acceptance in the classroom.
