NUTR 20400 - Food, History And Culture
Food, History & Culture is designed to examine the fundamental tenets that govern human behavior around food choices and foodways. symbolic value and meaning of food will be looked at; the relationship of food cultures to consumer behavior will be scrutinized. Study in this course will explore the historical development of the current food cultures in Europe, Asia, Africa, the Middle East and the Americas. Course study will also explore the impact of foodways and food choices on nutritional status and health. Foods representing select cultures and traditions will be studied and prepared during the laboratory portion of the course.
Preparation for Course P: HTM 10000 with grade of C- or better.
Cr. 3. Student Learning Outcomes 1. Analyze and describe systems of belief that have influenced and continue to influence food choices and food ways.
2. Identify foods and food ways that have symbolic meaning and/or value.
3. Explore and describe the current and past food ways of diverse cultures in various population groups in Europe, Asia, Africa, the Middle East, and the Americas.
4. Recognize and analyze the complexities influencing food choices and behaviors taking into account social, psychological, historical, political, technological, and economic factors.
5. Describe the relationship and impact of food ways on consumer behavior.
6. Identify and describe the effect of food ways and food choices on nutritional status and health.
